A rigorous hand-selection of vines is carried out in small boxes, followed by a second selection at the winery.
Following pre-fermentation maceration, fermentation is carried out in French oak vats at a temperature of 26ºC. Post-fermentation maceration lasts 7 days and ageing is carried out in French and American oak barrels for 14 months. Ageing is concluded in our underground bottle cellar for a further 10 months.
