WINE MAKER
SARA BAÑUELOS , Technical Director of Bodegas Ramón Bilbao Rueda. Agricultural Engineer and Degree in Oenology at the University of La Rioja. Her favorite wine in the afternoon is Edicion Limitada and Ramón Bilbao Sauvignon Blanc fills her with positivity in the morning.
First harvest at Finca las Amedias, Rueda, at an altitude of 700m and at night in order to prevent premature fermentation and oxygenation. The vines are hand-picked from each plot, ensuring they are at optimal ripeness.
Fermentation maceration is carried out for 10 hours at 6ºC in an inert atmosphere, followed by alcoholic fermentation at 16ºC in cement tanks, and the wine is transferred to barrels with the lees in suspension using batonnage once a week. Its is aged for 8 months in new French and Hungarian oak barrels.
Greenish-yellow in colour, this medium-intensity wine is clean, fresh, bright, and produces tears on the glass. It has an intense and rich aroma of citrus fruits with balsamic notes like sandalwood and mint, with more subtle aromas of chocolate and baked goods. In mouth, it is oily, with fresh and creamy acidity. Citric fruits reappear in the finish, combined with spices like white pepper.
Pairs well with pasta, risotto and oily fish. Serve between 11ºC and 13ºC.
